For our “Cooking with Milwaukee Community Leaders” segment, we interview Randy Bryant, noted as one of Wisconsin’s 35 Most Influential Black Leaders.


Randy Bryant is a visionary executive and global leader with 30+ years of experience in Fortune 100, Private and Not-for-Profit corporations. He has an impressive record of achieving dramatic results in business operations and profit & loss (P&L) management success.
Randy is the President and CEO of Ten Chimneys Foundation. Ten Chimneys is the National Historic Landmark estate of 20th-century Broadway legends Alfred Lunt and Lynn Fontanne. It is dedicated to American theater and historic preservation. Bryant leads operations and all direct functions.

Mango Gazpacho
Mango Gazpacho is a chilled Spanish soup made using mangoes, cucumber, and a few other simple ingredients. It is a perfect soup to sip on hot summer days (vegan, gluten-free). Mango Gazpacho is a delicious fruity twist on the classic summer savory soup, gazpacho.



Gazpacho is a popular dish that originated in Spain. Served as a chilled dish, it is a soup that is made using raw vegetables, especially tomatoes as the base.


Mangoes add a little sweetness to the chilled soup and this soup is perfect to serve on hot summer days. This no-cook, vegan, and gluten-free soup comes together in under 15 minutes using simple ingredients.




Ingredients
- 4 large mangoes peeled, pitted, and cut into chunks
- 1 English cucumber peeled and cut into chunks
- 2-3 green onion roughly chopped
- 2 garlic cloves chopped
- 1 tbsp plus a little more, olive oil
- 2 tsp of apple cider vinegar
- ¼ cup of filtered cold water
- Salt and freshly ground pepper to taste
- Garnish
Instructions
- Place the mangoes, cucumber, green onion, and garlic in a blender or the bowl of a food processor and pulse a few times until puréed.
- Add the olive oil, apple cider vinegar, salt, pepper, water, and purée.
- Add additional cold water if needed to achieve a soup-like consistency.
- Taste and adjust seasoning.
- Place in the refrigerator to chill for an hour or until ready to serve
- Serve in small bowls or small glasses garnished with a couple or more of the optional garnishes
