Chicken Salad on Croissants and Cooking with Milwaukee Community Leaders. The Upstart Kitchen comes to visit, along with Tamesha Patrice, one of the clients of the Upstart Kitchen.

We welcome Bishop Walter Harvey and Dr. Glen Matthews. Bishop Harvey is CEO of Prism Economic Development Corp, which runs the Upstart Kitchen. Dr. Matthews is the Executive Director of Prism Economic Development Corp.

The Upstart Kitchen was Milwaukee’s first 24/7 commercial kitchen and business incubator.  It opened in September 2020. Right in the middle of the pandemic.

Many non-profits have supported Upstart Kitchen since the beginning. Organizations like Ascension Wisconsin, the Greater Milwaukee Foundation, Bader Philanthropies, Parklawn Assembly of God, Elmbrook Church, as well as some private supporters. I think we can say that Upstart Kitchen draws support from a wide variety of sources and has become integral in helping small businesses in an underserved area of Milwaukee.

So in our series, “Cooking with Milwaukee Community Leaders” Bishop Harvey and Dr. Matthews help Tamesha Patrice of the Dream Catering Company put together a delicious Chicken Salad Sandwich on Croissants.

In the home of Tamesha Patrice, she began baking dessert cakes and homemade desserts for friends and family and that passion for creating quickly progressed into a plan to fulfill a lifelong dream.

Baked Dreams Bakery was born in 2012 and has since been re-branded as Baked Dreams Creations in 2018. Baked Dreams specializes in delicious desserts, cakes, cheesecakes, and celebration cakes of all kinds. She also runs the Dream Catering Company, out of the Upstart Kitchen in the Sherman Park neighborhood of Milwaukee.

Chicken Salad on Croissants

Tamesha uses a rotisserie chicken to form the base of her delicious Chicken Salad. Add in chopped hard-boiled eggs, red onions, pickle relish, mayo, and fresh tarragon. A slice of gouda cheese and fresh lettuce are placed on fresh croissants and topped with a tasty chicken salad.

How to Make Chicken Salad

Chicken salad is easy to make and a great way to use up leftover chicken from a whole roasted chicken. You can also poach the chicken in chicken broth to make this chicken salad.

To make the salad, remove the chicken from the bones and chop it, with fine veggies, then combine with mayonnaise, celery, onions, Dijon mustard, a little chicken broth if needed, and season with salt and pepper.

How to Poach Chicken Breast for Chicken Salad

If you want to poach your chicken breast, follow these simple steps:

Cover chicken breast in broth in a small pot, add water if it doesn’t cover the chicken.

Add salt and pepper, a piece of celery, and the leaves (you could add herbs like parsley, garlic, onion, or whatever you want) and bring to a boil. Reduce to a simmer and cook for 5 minutes.

Remove from heat, cover tightly, and let it sit for 15-20 minutes or until the thickest part of the breast registers 160 degrees. The chicken will be cooked through. Let it cool and chop for the Chicken Salad.

Tamesha’s Chicken Salad on Croissants


1 rotisserie chicken, meat off the bone and chopped

1 small red onion chopped

6 celery stalks chopped

½ cup sweet pickle relish

2 tbsp chopped tarragon

1.5 lemons juiced

1 cup mayonnaise

Salt & Pepper to taste

6 croissant rolls

Slice gouda cheese

Lettuce for sandwiches

Slices of dill pickle


  1. Combine 1st eight ingredients in a large bowl and combine
  2. On  a croissant roll, place the lettuce and then the cheese on the bottom
  3. Add a scoop of chicken salad to the slice of cheese
  4. Serve on a plate with a slice of dill pickle
