Grilled Surf and Turf & Joel Brennan Interview

Grilled Surf and Turf are the best of both worlds. Perfectly cooked salmon for the surf, two beautiful Rib Eye steaks for the turf. We topped the Rib Eyes with mushrooms that cooked on the grill also.

Our guest for “Cooking with Milwaukee Community Leaders” was Joel Brennan, President of the Greater Milwaukee Community. Previously, Joel was CEO at Discovery World for 12 years

After a short interview, Joel shows us how he prepares and grills a delicious Grilled Surf and Turf.

Grilled Surf and Turf

The salmon (Surf) was marinated in a teriyaki sauce and the rib eyes (Turf) were marinated in a bourbon BBQ sauce. Both were delicious. Minimal spices were added, other that a little olive oil for the steaks.

It was a beautiful March day to grill in Milwaukee, which is to say it was cold, but not frigid. Snow and ice were on the ground, but the temperature was in hi the 20s and mild. No need for a jacket.

Grilled Rib Eye Steaks, marinated in a Bourbon BBQ Sauce

Salmon Filet, marinated in a Teriyaki sauce

Portobello mushrooms, seasoned with salt, pepper, and olive oil, sealed in foil, and grilled with indirect heat.
