Chicken Parmesan Sandwich – and a “Cooking with Milwaukee Community Leaders” interview with Milwaukee County Executive David Crowley.



Sworn into office in May of 2020, David became the youngest county executive in the history of Milwaukee County and the first Black leader elected to serve in the role. Since being sworn in, County Executive David Crowley led the implementation of the first county-wide strategic plan in 20 years, focusing the County on a vision of achieving racial equity and by doing so becoming the healthiest county in the state.



David shares a recipe he got from Milwaukee Firefighter Tim Burgess, who works (and cooks) at the Milwaukee International Airport Firehouse. It is Chicken Parmesan Sandwiches, that he prepares on a regular basis at the Firehouse.


Chicken Parmesan Sandwich
There is never a bad time for this chicken parmesan sandwich, You are going to love these delicious chicken parmesan sandwiches! The chicken is wonderfully tender and crispy.





We put some crispy bacon underneath the chicken breast. Then we top it with marinara, provolone, and mozzarella for a really tasty bite!




Chicken breast is breaded and pan-fried so that it is wonderfully crispy. Each bite is a little bit of heaven. It is an easy process, and it tastes amazing. Turning chicken parm into Chicken Parmesan Sandwiches makes it more casual so that you can enjoy this favorite recipe any time.




Chicken Parmesan Sandwich Prep
Mix together the breadcrumb coating ingredients in one bowl. For added crispness, we combine Italian Bread Crumbs with Panko Bread crumbs and Parmesan Cheese. We whisk the egg in another bowl with some flour. Heat the marinara sauce and fry the bacon. It will all come together in less than 30 minutes.

- No special equipment needed
Ingredients
- Italian-style breadcrumbs
- 6 Italian Sandwich/Sub rolls
- 3 Chicken boneless Breasts butterflied
- Stick of salted butter
- 2-3 eggs
- Minced garlic
- Sliced mozzarella cheese enough for 6 sandwiches
- Sliced provolone cheese enough for 6 sandwiches
- 1 lb of bacon
- Vegetable oil
- 1 cup Flour
- 1 jar marinara sauce
Instructions
Bacon prep
- Cook the bacon in a frying pan
- Set aside until bread prep is complete.
Bread prep
- Preheat oven to 350 degrees.
- Slice the bread in half.
- Melt butter and garlic on low heat in a small pan.
- Brush melted garlic butter on both sides of the bread.
- Place bacon on the bottom side of the bread
- Take mozzarella cheese and layer the bottom piece of bread above the bacon strips.
- Set aside until the chicken is cooked.
Chicken prep
- Pour breadcrumbs into a bowl.
- Place 2-3 eggs in a separate bowl and beat with a fork.
- Add flour and stir in with the egg
- Cut chicken breasts horizontally to even thickness
- Put chicken breast in egg and coat fully.
- Place chicken in breadcrumbs and coat
- Heat marinara sauce in a medium saucepan until hot.
- In a large frying pan, turn the heat on medium to 325 degrees.
- Pour oil until ¼ full
- Once oil is hot cook chicken for 6-7 min on each side (to 160 degrees)
- Remove from oil and set aside
Sandwich prep
- Oven should still be at 350
- Place the finished chicken breast on the bottom layer of the bread
- Take provolone cheese and cover chicken breast until fully covered.
- Place both the top and bottom (open face) of the sandwich in the oven for about 5 min, until the provolone cheese is melted.
- Remove the sandwich, take a ladle of marinara and lightly coat the chicken.
- Place the top of the bread onto the chicken and cut it in half.
- Use small dipping bowls if more marinara is wanted.
