Stetson Salad – Cowboy Ciao was a restaurant in Scottsdale that has closed. They were famous for their Stetson Salad. The Stetson Salad has a wonderful combination of textures and flavors. And the dressing is a buttermilk-pesto-mayo-lemon combination that’s perfect for this dish.  And the variations in the salad ingredients are endless. You can add smoked salmon or roasted chicken if you like.

Cowboy Ciao and the Stetson Salad

The Stetson Salad is an iconic Scottsdale, Arizona dish.  Originally on the menu at Cowboy Ciao, you can now find it at The Gladly and Citizen Public House, with different spins of their own. Cowboy Ciao is no more but the legend of the Stetson Salad lives on!

What makes the Stetson salad so special is the look and the ingredients.  It’s very special in that all the ingredients are lined up:  arugula, ripe diced plum tomatoes, sweet corn, and a trail mix comprised of grated Asiago cheese, dried cranberries, and pepitas.  The dressing gets poured over the salad at the table by the server and tossed before serving.

Equipment

  • No special equipment needed

Ingredients

  • 1 cup cooked Israeli couscous
  • 1/2 cup diced Roma tomatoes
  • 1/2 cup dried sweet corn
  • 1 cup chopped arugula
  • 2 ounces smoked salmon diced (could substitute chicken)
  • 1/2 cup Asiago cheese
  • 1/4 cup dried currants
  • 1/4 cup toasted pepitas pumpkin seeds

Dressing

  • 1/4 cup basil pesto
  • 1/2 cup mayo
  • 1 shallot
  • 1/2 cup buttermilk
  • 1 lemon juiced
  • Salt & pepper to taste

Instructions

  • Arrange salad ingredients in separate rows on a large platter.
    Stetson Salad Presentation
  • To make the dressing, place all ingredients in a blender and blend well.
    Buttermilk Pesto Dressing
  • Toss the dressing on top of the salad.
    Adding Buttermilk Pesto Dressing to Stetson Salad
  • It will keep in the fridge for up to a week.
