Materials

  • 1 cup cooked Israeli couscous
  • 1/2 cup diced Roma tomatoes
  • 1/2 cup dried sweet corn
  • 1 cup chopped arugula
  • 2 ounces smoked salmon diced (could substitute chicken)
  • 1/2 cup Asiago cheese
  • 1/4 cup dried currants
  • 1/4 cup toasted pepitas pumpkin seeds

Dressing

  • 1/4 cup basil pesto
  • 1/2 cup mayo
  • 1 shallot
  • 1/2 cup buttermilk
  • 1 lemon juiced
  • Salt & pepper to taste

Instructions

  • Arrange salad ingredients in separate rows on a large platter.

  • To make the dressing, place all ingredients in a blender and blend well.
    Buttermilk Pesto Dressing
  • Toss the dressing on top of the salad.
