Mushroom Noodle Stir Fry – Stir-fried mushrooms and noodles can be easy and simple recipes to prepare. They are popular Asian standbys, popular throughout the Japanese and Chinese cultures. They’re packed with flavor from all the ginger, garlic, herbs, and spices.








Stir fries are one of my go-to recipes for an easy, quick weeknight meal. Even with vegetarian or vegan versions, there are so many options for different sauces, vegetables, and noodles.



Mushroom Noodle Stir Fry
Ramen noodles (or similar) are an inexpensive and easy-to-cook option. You can use your preferred type of noodles in any stir-fry recipe The spice and flavor are customizable. Add as many vegetables, garlic, ginger, herbs, and spices to make it your own.


For this recipe, Tarik is using Shiitake Mushrooms. They are meaty, which is great for a vegan or vegetarian recipe. Shiitakes also have a slightly smoky flavor and a texture that can hold their own against big, bold flavors. Remember to remove the stems.
You can’t have a mushroom stir fry without mushrooms. Make sure you’re buying fresh mushrooms with a firm, dry texture.


Mushroom Noodle Stir Fry Recipe and Ingredients
See Below – Vegetable Oil, Unagi Eel Sauce, Fish Sauce, Sesame Oil, Garlic Ginger Sauce, Shiitake Mushrooms, Green Onions, Shredded Carrots, 1 package of Asian noodles (your choice), and Chopped Cilantro.

Equipment
- Wok or large sauté pan
Ingredients
- 2 tbsp Vegetable Oil
- 12 oz mushrooms chopped or sliced (Shiitake Mushrooms are best)
- 1 tsp Sesame Oil
- 1 package Asian noodles your choice
- 1 shallot chopped
- 5-6 garlic cloves chopped
- 6 scallions chopped
- 1 tsp Fish Sauce
- 1 tsp Soy Sauce
- 1 tsp Unagi Eel Sauce
- 2 tbsp Garlic Ginger Sauce
- 6 oz Shredded Carrots
- Chopped Cilantro for garnish
Instructions
- Cook the noodles according to package directions.
- After the noodles are cooked, rinse and set aside
- Heat 1 tbsp of oil
- Sauté the mushrooms 4-6 minutes
- Add 1 tsp sesame oil on the mushrooms
- Toss the noodles with 1 tsp of sesame oil
- Remove mushrooms from pan and set aside
- Add 1 tbsp to empty pan
- Sauté 1 chopped shallot
- Add 5-6 chopped garlic cloves to shallots
- Sauté 6 scallions with garlic & shallots
- Add 1 tsp fish sauce
- Add 1 tsp soy sauce
- Return reserved mushrooms to the pan
- Add 1 tsp unagi eel sauce
- Add 2 tbsp Ginger Garlic Paste
- Add cooked noodles into pan
- Toss to coat the noodles
- Add the shredded carrots and incorporate with noodles
- Top with chopped cilantro and serve
