Cook the noodles according to package directions.
After the noodles are cooked, rinse and set aside
Heat 1 tbsp of oil
Sauté the mushrooms 4-6 minutes
Add 1 tsp sesame oil on the mushrooms
Toss the noodles with 1 tsp of sesame oil
Remove mushrooms from pan and set aside
Add 1 tbsp to empty pan
Sauté 1 chopped shallot
Add 5-6 chopped garlic cloves to shallots
Sauté 6 scallions with garlic & shallots
Add 1 tsp fish sauce
Add 1 tsp soy sauce
Return reserved mushrooms to the pan
Add 1 tsp unagi eel sauce
Add 2 tbsp Ginger Garlic Paste
Add cooked noodles into pan
Toss to coat the noodles
Add the shredded carrots and incorporate with noodles
Top with chopped cilantro and serve
