
Peach Caprese Salad – Fresh Peaches, with Mozzarella Cheese, Basil and Mint, black pepper, and sea salt.
A great Caprese starts with great fruit. Basil adds freshness, black pepper and salt add crunch, and it’s a great combination. Stone Fruits are similar in flavor to tomatoes but need some help to get their juices flowing. Their fruitiness becomes more apparent when sliced peaches are marinated with salt, sugar, and lemon juice.





Here in Wisconsin, there is a company called Tree-Ripe Fruit Co., which delivers fresh Georgia peaches annually to hundreds of locations throughout Wisconsin. They drive a tractor-trailer or similar large truck into a large parking lot, set up some tables, and you have an Instant Pop-Up Georgia Peach store. People line up around the perimeter of the parking lot, just to get some right-off-the-truck fresh Georgia peaches.


I have been buying these peaches for 5-6 years, and they never disappoint. I usually have a peach on my cereal in the morning, but I also have grilled peaches for dessert. Last summer, we made a Summer Peach Salad w/Chilis & Sliced Almonds.


Peach Caprese Salad
This year, I am going to make a Peach Caprese Salad, based on a recipe I saw in the NY Times food section (Stone Fruit Caprese Salad). Instead of ripe tomatoes in a Caprese salad, we substitute ripe peaches.
Peach Caprese Salad – What is a Stone Fruit?
A key similarity for Stone fruits (including peaches) is that they have a singular pit or stone at the center. That is where the seed is. Stone fruit, also known as drupes, are usually in season from late May through early October in the US.

Peach Caprese Salad
Equipment
- No special equipment needed
Materials
- 2 pounds ripe peaches
- 1 tbsp lemon juice
- 2 tsp sugar
- 1 tsp salt
- 8 oz fresh mozzarella
- 20 basil and/or mint leaves
- 2 tbsp extra-virgin olive oil
- Black pepper to taste
- Optional sliced avocado
Instructions
- Pit the peach and cut into bitesize pieces.

- Move peaches to a serving platter, then sprinkle with the lemon juice, sugar and ½ tsp salt.

- Toss with your hands, then let sit in the juices, 5 to 10 minutes.
- Tear the mozzarella into bite-size pieces and add in the peaches.

- Arrange avocado slices on salad if using
- Sprinkle the basil/mint leaves over the fruit

- Drizzle the platter with olive oil.

- Sprinkle with salt & pepper, and serve.
