Materials

  • 2 pounds ripe peaches
  • 1 tbsp lemon juice
  • 2 tsp sugar
  • 1 tsp salt
  • 8 oz fresh mozzarella
  • 20 basil and/or mint leaves
  • 2 tbsp extra-virgin olive oil
  • Black pepper to taste
  • Optional sliced avocado

Instructions

  • Pit the peach and cut into bitesize pieces.

  • Move peaches to a serving platter, then sprinkle with the lemon juice, sugar and ½ tsp salt.

  • Toss with your hands, then let sit in the juices, 5 to 10 minutes.
  • Tear the mozzarella into bite-size pieces and add in the peaches.

  • Sprinkle the basil/mint leaves over the fruit
