Peach Caprese Salad
Fresh Peaches, with Mozzarella Cheese, Basil and Mint, black pepper, and sea salt

- 2 pounds ripe peaches
- 1 tbsp lemon juice
- 2 tsp sugar
- 1 tsp salt
- 8 oz fresh mozzarella
- 20 basil and/or mint leaves
- 2 tbsp extra-virgin olive oil
- Black pepper to taste
- Optional sliced avocado
Pit the peach and cut into bitesize pieces.
Move peaches to a serving platter, then sprinkle with the lemon juice, sugar and ½ tsp salt.
Toss with your hands, then let sit in the juices, 5 to 10 minutes.
Tear the mozzarella into bite-size pieces and add in the peaches.
Arrange avocado slices on salad if using
Sprinkle the basil/mint leaves over the fruit
Drizzle the platter with olive oil.
Sprinkle with salt & pepper, and serve.
