With me today is my good friend, Joanne Anton. You may remember Joanne from “Cooking with Milwaukee Community Leaders,” when she made Spanakopita from scratch. Joanne is Greek-American and one of the best cooks I know.

Today, I asked her to help me assemble an authentic Greek Salad. Not the Greek Salad you see in the pre-made salad section of Kroger or something you would order in a restaurant here in the US.

Joanne brought some traditional and authentic Greek ingredients to help prepare a salad that you might find in a taverna in Athens. And in Athens, they would not call it a “Greek Salad”. This is a Village Salad or Horiatiki in Greek.

Preparing an Authentic Greek Salad

  • An Authentic Greek Salad does not have any lettuce
  • An Authentic Greek Salad is not mixed before it is served.
  • The Greek feta cheese is cut into one or two large pieces and placed on top of the salad.
  • The tomato and cucumber should be cut into uniform pieces, fairly large.
  • Olives are added whole not sliced, and should be pitted
  • The salad is served with Dakos bread, not pita bread.
  • An Authentic Greek Salad is in a shallow bowl.
  • Use the freshest ingredients. And the freshest Greek ingredients if possible

Ingredients for an Authentic Greek Salad

  • Dakos – Greek Bread
  • Extra Virgin Olive Oil: Preferably fresh Greek olive oil
  • Ripe tomatoes
  • Cucumber
  • Red Onion
  • Kalamata olives – pitted and not from a can
  • Greek Feta Cheese
  • Dry Greek Oregano

Greek Salad Dressing

The dressing for the Authentic Greek Salad is easy. You do not make any dressing beforehand, you just drizzle extra virgin Greek olive oil on the salad. A traditional Authentic Greek Salad does not have any type of dressing other than olive oil.

Ingredients

  • 1 piece Dakos – Greek Bread
  • 1 cup Extra Virgin Olive Oil: Preferably fresh Greek olive oil
  • 3 Ripe tomatoes Chopped
  • 1 Cucumber peeled and sliced
  • 1 Red Onion thinly sliced
  • 1 cup Kalamata olives – pitted and not from a can
  • 1 block Greek Feta Cheese
  • 1 tsp Dry Greek Oregano

Instructions

  • Use a shallow bowl for this Authentic Greek Salad
  • In the shallow bowl, break up Dakos into bite sized pieces

  • Layer the tomatoes, red onion, cucumbers, Greek capers, and kalamata olives on the Dakos

  • Cut a square slice of Feta Cheese and place on top of the vegetables

  • Sprinkle with Greek Oregano
  • Add Greek Olive Oil over all of the ingredient’s
