I wanted to give a shout-out to my friend, Susan Kim. Her husband, Paul, was in Milwaukee for the 2022 US National Triathlon Championships. Both Susan and Paul are pescatarians, so this recipe is for both of them. Good luck to them and all of the participants in the Triathlon Championships.

Shrimp Salad with Mango and Avocado
Zesty and filling, this no-cook shrimp salad combines fresh summer ingredients, like mangoes and avocados, with a quick three-ingredient dressing. You can have this salad on the table in less than 30 minutes. This shrimp salad with avocado and mango is so simple and easy to make. It is fresh and zesty. The Shrimp Salad with Mango and Avocado works with all of your favorite main dishes. It is also a great sit-down appetizer.



Mango and Avocado
Sweet mangoes, creamy avocado, and chili-seasoned shrimp with a hint of spice are tossed in lime juice. They are mixed with chili peppers, onions, and cilantro. You can serve this Shrimp Salad with Mango and Avocado as an appetizer for summer parties. Alternatively, you can make it a simple make-ahead meal during the week! Either way, it’s delicious and the perfect tropical summer salad!

Shrimp Salad w/Mango & Avocado
Materials
- Dressing:
- ½ tsp lime zest from one lime
- 2 tbsp fresh lime juice about ½ lime
- 2 tbsp olive oil
- 2 tbsp chopped cilantro
- 1 tsp honey
- 2 tsp finely chopped seeded jalapeno
- Salt & Pepper
- Shrimp
- 1 tbsp olive oil
- 8 ounces peeled and deveined large shrimp
- 1 tsp chili powder
- Salad
- 6 cups torn leaf lettuce
- 1 medium mango diced
- ½ avocado diced
- ¼ cup thinly sliced red onion
Instructions
- Instructions
- Combine dressing ingredients in a small bowl or jar. Set aside.
- Heat 1 tablespoon olive oil in skillet over medium high heat.
- Sprinkle shrimp with chili powder and toss to coat.
- Add shrimp to skillet and fry two to three minutes each side
- Remove from pan.
- Combine lettuce with half the dressing.
- Arrange on serving plates.
- Divide shrimp, mango, avocado, and onion between two plates.
- Drizzle with remaining dressing.
- Serve immediately.

Easy, quick recipe for a meal course salad
