Blueberry Pie Bars (In Leland, MI)

These Blueberry Pie Bars are an easy, summer baking concoction that is a hit at parties and family gatherings. I hope you like butter, sugar, and flour, as well as blueberries. You can get 16 Blueberry Pie Bars out of one pan.

Blueberry Pie Bars are a delightful twist on classic blueberry pie. They offer all the fruity, buttery goodness in a convenient bar form. Blueberry Pie Bars typically feature a buttery shortbread-style crust. They also include a sweet and tangy blueberry filling. A crumbly topping adds texture and richness. Some variations include ingredients like sour cream or Greek yogurt in the filling for extra creaminess. Others use oats or almond flour for a heartier crumble.

These bars are easier to make than traditional pie. There’s no need to roll out a crust. Just press the dough into a pan, layer the filling, sprinkle the topping, and bake until golden and bubbling. They can be served warm with ice cream or chilled for a firmer texture, making them a versatile treat for any occasion

Blueberry Pie Bars INGREDIENTS – 3 Parts, made separately

Crust and Crumble Topping

  •  ½ cup butter, melted
  •  ½ cup sugar
  •  ¼ cup brown sugar
  •  1½ cups flour
  •  pinch salt, to taste

Filling

  •  1 large egg
  •  ½ cup sour cream (or plain or vanilla Greek yogurt)
  •  1/3 cup sugar
  •  2 tsp vanilla extract
  •  1 tbsp flour

Blueberry Layer

  •  2 cups blueberries
  •  1/3 cup sugar
  •  2 tbsp lemon juice
  •  2 tsp cornstarch

Blueberry Pie Bars Instructions

  1. First, preheat oven to 350°F.
  2. Secondly, line an 8-inch square pan with aluminum foil (Lining the pan with foil will make clean up a lot easier)

Make the Crust and Crumble Topping

  1. In a large bowl, melt the butter, about 1 minute on high.
  2. Next, add the sugars and whisk to combine.
  3. Add the flour and salt, and stir to combine. The mix will be a little dry with some larger, crumbly pieces.
  4. Set ¾ cup of the crumble mixture aside for the crumble topping
  5. Place the rest of the mix in the foil-lined pan. A spatula packs the mixture into a smooth, flat, even crust.

The Filling

  1. In a medium bowl, add the egg, sour cream, sugar, and vanilla, and whisk to combine.
  2. Add the flour to the mixture and whisk to combine.
  3. Evenly pour the filling over the crust and smooth it with a spatula.

Make the Blueberry Layer

  1. In a bowl, add blueberries, sugar, lemon juice, and cornstarch and toss to combine.
  2. Evenly distribute the blueberry mixture over the filling.
  3. Sprinkle the reserved ¾ cup of crust mixture over the blueberries.

Bake the Bars

  1. Bake for 60 minutes, when the edges are crispy and there is bubbling in the center.
  2. Place the pan on a wire rack. Allow the bars to cool for at least an hour or two. Then you can slice them.
  3. If you try to slice bars before they’ve cooled completely, they’ll be extremely messy and fall apart. 
  4. Finally, pull the foil out of the pan, with the bars on top, and slice into approx. 16 squares
