My entry into #Britishfood is Bangers & Mash. This has to be one of the coolest recipe names. We will serve the Bangers with Mash and one of life’s greatest inventions, frozen green peas.


Bangers and Mash
Bangers and mash hold a special place in British culinary tradition. It is a comfort food deeply tied to working-class history and pub culture.


Where does the name Bangers and Mash come from?
The name “bangers and mash” comes from World War I. Food shortages led to sausages being made with a high-water content. When cooked, the water inside would cause the sausages to explode with a bang, earning them the nickname “bangers”.


Meanwhile, mash is simply short for mashed potatoes. The dish is traditionally served with onion gravy and sometimes peas, making Bangers and Mash a hearty pub favorite.


Bangers and Mash is a symbol of British resilience, reflecting how people adapted their meals during tough times. Over the years, it has remained a pub staple. It is often served with onion gravy and green peas. This makes it a hearty, affordable meal enjoyed across the UK.


It also shows regional diversity, with different types of sausages used depending on the area. Cumberland sausage from northwestern England is a particularly traditional choice.


Bangers and Mash
Materials
- 1 tbsp oil
- 8 sausages of choice See Note
- 1 large onion halved and sliced
- 2 garlic cloves minced
- 3 tbsp flour
- 2 cups beef stock
- salt & pepper to taste
- Mashed potato For serving
- Green Peas For serving
Instructions
- Heat oil in a large pan over medium-high heat.

- Add sausages and cook, turning, until browned all over and cooked through.

- Remove the sausages onto a plate. Turn the heat down to medium.

- Add 2 tbsp of oil left in the skillet. If needed
- Add onion and garlic, cook until golden brown – around 4 minutes.

- Add salt and pepper to taste
- Add flour and mix through. Then cook, stirring constantly, for 2 min.

- Add 3/4 cup of beef broth and mix into the onion to become a slurry.

- Then add the remaining beef broth and mix until combined. If it’s lumpy, use a whisk to help make it smooth.
- Simmer, stirring, for 2 to 3 minutes until the gravy thickens.

- Add salt and pepper. Stir, taste, then add more salt if you want.
- Serve sausages with plenty of onion gravy, mashed potatoes, and peas on the side.
