Strawberry Fields Salad is a healthy salad recipe that’s full of fresh flavors.
Our guest for “Cooking with Milwaukee Community Leaders” is Marjorie Rucker. Marjorie has been the Executive director of The Business Council Inc. since 2014. This year she received the Diverse Business Development Award at the MARKETPLACE conference. She assists businesses in better accessing corporate supply chains. She is the chair of the Ethnic and Diverse Business Coalition. Marjorie is on the list of Wisconsin’s 51 Most Influential Black Leaders.



Strawberry Fields Salad
Fresh greens are topped with grilled chicken, roasted pecans, crumbled bleu cheese (or any stinky cheese you like), thinly sliced red onion, crispy bacon, and fresh sliced strawberries. The combination of sweet, salty, creamy, and crunchy is a perfect blend of textures. It is a hearty, but filling salad.



It’s perfect for summer, due to the amount of in-season, fresh strawberries. It is filling at the same time with the addition of chicken, bacon, and bleu cheese. You can make this many times over and never get tired of eating it.
Fast Food Strawberry Fields Salad
Wendy’s serves a similar salad, which is called a Summer Strawberry Fields Chicken Salad. We make our own fresh Strawberry Vinaigrette for the salad. And I believe that Culver’s has the same type of salad on their menu.


You can save money by making this at home. Serve it family-style as a side dish. This Strawberry Fields Salad is protein-filled, especially if you add grilled chicken breast and bacon.
Cook the bacon ahead of time and use a rotisserie chicken for an easy meal prep.
Strawberry Balsamic Vinaigrette
You should make your own vinaigrette. This strawberry balsamic vinaigrette only takes about 5 minutes to make. It’s very flavorful is the perfect topping to the Strawberry Fields Salad.




Equipment
- Blender for the dressing
Ingredients
- 4 strips bacon precooked and crumbled
- 1 cup whole pecan halves
- 1 tbsp butter
- 2 tbsp honey
- 2 chicken breasts – Diced/ready chicken or rotisserie
- salt and pepper to taste
- 1 bag mixed greens
- 1 lb strawberries trimmed & sliced
- 1/2 small red onion thinly sliced
- 4 oz bleu cheese crumbled
Strawberry Balsamic Vinaigrette
- 1 cup strawberries sliced
- 2 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- 1 tbsp Honey
- 1 tbsp Brown sugar
- salt and pepper to taste
Instructions
Cook the Bacon
- Preheat to oven to 400 degrees.
- Cook bacon until crisped, about 5-10 minutes.
- Crumble, then set aside.
- Cut cooked chicken into uniform pieces.
Roast the Pecans
- Turn oven down to 350 degrees.
- Melt butter and honey in a bowl add pecans and toss to coat.
- Spread out on a silpat or parchment paper on a baking sheet
- Bake for 5-6 minutes, or until golden brown and fragrant
- Sprinkle lightly with salt then set aside to cool.
Prepare the Salad Ingredients
- Divide greens between the plates and top with bacon, roasted pecans, chicken, strawberries, red onion, and bleu cheese.
- Drizzle on Strawberry Balsamic Vinaigrette (recipe below)
Strawberry Balsamic Vinaigrette
- Place all ingredients in a small blender or food processor.
- Blend at medium to high speed until well mixed, about one minute.
- Taste the dressing and adjust with more sweetener or vinegar, as needed.
