
Lamb Chops, Smoked Whitefish Dip from Sweden
Each month, a group of YouTube chefs from around the world prepares dishes from a single chosen country. I am teaming up with great local Milwaukee chefs to represent the country we are highlighting. This month, we are in Sweden, #SwedishRecipes.
And I am very pleased to be cooking with Chef Jose Gonzalez, the Executive Chef at the very fine Scandinavian restaurant Eldr+Rime. Loosely translated from Old Norse, Eldr+Rime means Fire+Ice.



Chef Jose Gonzalez is the Executive Chef at Eldr+Rime in Wauwatosa (part of the greater Milwaukee area). A proud Mexican-American, he specializes in layering bold flavors and executing Fire + Ice Scandinavian and Asian-fusion cuisines, as well as hosting exclusive, multi-course Chef Counter tasting events.

His culinary footprint in the Milwaukee area includes:


- Eldr+Rime: Located at 2300 N. Mayfair Rd (inside the Renaissance Milwaukee West). He leads the kitchen and frequently curates specialized tasting menus, such as Orin Swift wine dinners and Cinco de Mayo celebrations.
- Milwaukee Chef Collaboration Dinners: He has served as a featured chef at these prominent local events, creating multi-course dinners to support charities like Cooking For Kids.
Lamb Chops in Sweden

Lamb chops are called lammkotletter in Swedish.


Fire-roasted lamb chops in Sweden combine premium, grass-fed Swedish lamb with traditional open-fire or wood-fired “wild cooking” (often referred to as friluftsliv). These chops are typically seasoned with juniper, rosemary, garlic, and sea salt, and seared directly over hot birch or beech embers for a distinct, smoky flavor.


What Makes Swedish Lamb Chops Special?

Sweden has a long tradition of raising sheep on open pastures, particularly on islands such as Gotland. Swedish lamb is often prized for its mild, slightly sweet flavor because the animals graze on wild herbs, grasses, and coastal vegetation.
Cooking Lamb Chops Over a Wood-Fired Grill

A wood-fired grill brings several advantages:
- High heat creates a beautiful crust while keeping the inside juicy.
- Natural smoke from hardwoods such as oak, birch, or fruitwoods adds depth without overpowering the meat.
- Open-flame cooking produces slight charring that complements lamb’s rich flavor.


Traditional Flavor Profile
Swedish-style lamb is often seasoned to let the meat shine:
- Coarse sea salt
- Freshly cracked black pepper
- Garlic
- Rosemary or thyme
- Butter for finishing
Some cooks also brush the chops with a mixture of butter, garlic, and herbs while grilling.

How Lamb Chops are Typically Cooked
- Bring lamb chops to room temperature.
- Season generously with salt, pepper, garlic, and herbs.
- Build a hot wood fire and allow it to burn down to glowing embers.
- Grill the chops 3–5 minutes per side for medium-rare, depending on thickness.
- Rest for 5–10 minutes before serving.

The combination of smoky lamb, earthy potatoes, and the sweet-tart flavor of lingonberries creates a distinctly Scandinavian balance.

For a backyard cookout, pairing fire-roasted Swedish lamb chops with wood-grilled potatoes, charred asparagus, and a lingonberry reduction would create a meal that feels both rustic and elegant. The key is to let the wood fire and quality lamb do most of the work.
Swedish Smoked Fish Dip
In Sweden, smoked trout and whitefish are typically enjoyed as a cold-smoked fillet, a spread called rökt forell or rökt sik.


In Swedish, “Smoked Trout & Whitefish dip” translates to rökt forell- och sikröra (or dipp på rökt forell och sik).
Here is the breakdown:
- Rökt: Smoked
- Forell: Trout
- Sik: Whitefish
- Röra: Dip, spread, or mix (the most common term for creamy, chunky dips served on bread or crackers in Sweden)



Make-at-Home Swedish Smoked Fish Dip Recipe
You can easily recreate a classic American-style dip using Swedish ingredients.


- The Fish: Use ½ lb of varmrökt forell (hot-smoked trout) and/or sik (whitefish). Flake the meat and remove any bones.
- The Base: 4 oz of crème fraîche with 4 oz of färskost (cream cheese) and 1 tbsp of mayonnaise.
- The Seasoning: Use fresh dill, chopped chives, a dash of lemon juice, a pinch of rökt paprika (smoked paprika), and salt and pepper to taste.
Swedish Whitefish Dip & Fire Roasted Lamb Chops
Equipment
- Blender For the marinade
- A Grill for the lamb chops
Materials
- 7 oz hot-smoked trout fillets skinless and boneless
- 7 oz hot-smoked whitefish skinless and boneless
- 4 oz crème fraîche
- 4 oz cream cheese (naturell färskost)
- 1 tbsp fresh lemon juice
- ½ tsp lemon zest
- 1 small shallot (schalottenlök), very finely diced
- 1 tbsp fresh horseradish (pepparrot), finely
- ¼ cup fresh dill finely chopped
- ¼ cup fresh chives (gräslök), finely chopped
- black pepper and a pinch of salt to taste
For the Lamb Chops
- 8 Lamb Chops Rib cut
- 1 lb fire roasted tomatoes
- 1 lb fire roasted red bell peppers
- 8 oz Guajillo Peppers roasted
- 8 cloves roasted garlic
- salt & pepper to taste
Instructions
- Prep the Fish – Remove the skin. Using your hands or a fork, flake the fish into bite-sized pieces in a mixing bowl.

- Mix the Creamy Base – In a separate bowl, whisk together the crème fraîche, cream cheese, lemon juice, lemon zest, shallot, and grated horseradish until smooth and fully combined.
- Combine and fold – Add the chopped dill and chives to the creamy base. Gently fold the flaked smoked fish into the mixture until everything is evenly coated.
- Season to Taste – Add some black pepper. Give it a quick taste before adding salt; hot-smoked fish is naturally quite salty, so you may only need a tiny pinch.
- Chill and Set – Cover the bowl and place it in the refrigerator for at least 1 hour.

For the lamb chops
- Put all the ingredients besides the lamb chops in a blender
- pulse until smooth
- strain the mixture to take out the skin and seeds
- Pour over the lamb chops, both sides

- Grill over the fire for 3-4 minutes each side

- If possible, finish as close to the fire as possible
- serve with your choice of roasted veggies or potatoes
