Equipment

Materials

  • 7 oz hot-smoked trout fillets skinless and boneless
  • 7 oz hot-smoked whitefish skinless and boneless
  • 4 oz crème fraîche
  • 4 oz cream cheese (naturell färskost)
  • 1 tbsp fresh lemon juice
  • ½ tsp lemon zest
  • 1 small shallot (schalottenlök), very finely diced
  • 1 tbsp fresh horseradish (pepparrot), finely
  • ¼ cup fresh dill finely chopped
  • ¼ cup fresh chives (gräslök), finely chopped
  • black pepper and a pinch of salt to taste

For the Lamb Chops

  • 8 Lamb Chops Rib cut
  • 1 lb fire roasted tomatoes
  • 1 lb fire roasted red bell peppers
  • 8 oz Guajillo Peppers roasted
  • 8 cloves roasted garlic
  • salt & pepper to taste

Instructions

  • Prep the Fish – Remove the skin. Using your hands or a fork, flake the fish into bite-sized pieces in a mixing bowl.

  • Mix the Creamy Base - In a separate bowl, whisk together the crème fraîche, cream cheese, lemon juice, lemon zest, shallot, and grated horseradish until smooth and fully combined.
  • Combine and fold - Add the chopped dill and chives to the creamy base. Gently fold the flaked smoked fish into the mixture until everything is evenly coated.
  • Season to Taste - Add some black pepper. Give it a quick taste before adding salt; hot-smoked fish is naturally quite salty, so you may only need a tiny pinch.
  • Chill and Set - Cover the bowl and place it in the refrigerator for at least 1 hour.

For the lamb chops

  • Put all the ingredients besides the lamb chops in a blender
  • pulse until smooth
  • strain the mixture to take out the skin and seeds
  • Pour over the lamb chops, both sides

  • Grill over the fire for 3-4 minutes each side
