Mexican Chorizo

Blanca shows us how she makes Mexican Chorizo as a Breakfast Dish. Chorizo is a key ingredient in many breakfast dishes, like chorizo and eggs. We cook this dish with a fried egg and serve it with tortillas.
Today, we are serving with a fried egg, over easy.
Mexican Chorizo is seasoned with chili peppers, including ancho, guajillo, and pasilla. It also includes vinegar and garlic. A variety of spices, like oregano, cumin, and coriander, are added. These give it a distinctive, smoky, and spicy flavor.


Mexican chorizo is typically sold fresh and needs to be cooked before eating. This contrasts with Spanish chorizo, which is often cured and can be eaten without cooking.
One of the most popular ways to enjoy Mexican chorizo is in tacos. Enjoy with tortillas and a fried egg.


Chorizo adds a spicy kick to quesadillas, burritos, and even nachos. Its robust flavor makes it an excellent addition to a variety of dishes. It enhances the overall taste and also adds heat. It can add depth and flavor to soups, stews, and chili.

- Render the fat during cooking, and drain some of it, as Mexican chorizo can be quite fatty.

Easy Guacamole for Mexican Chorizo
Creating a delicious guacamole to pair with Mexican chorizo is quite simple! Here’s an easy recipe that will complement the bold flavors of the chorizo:


Ingredients:
- 3 ripe avocados
- 2 small limes (juiced)
- 1/2 teaspoon salt
- 1/2 cup Pico de Gallo
Instructions:
- Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
- Mash the Avocados: Use a fork to mash the avocados until you reach your desired consistency—chunky or smooth.
- Add Lime Juice and Seasonings: Pour in the lime juice and add any seasonings you like. Mix well to combine.
- Taste and Adjust: Taste your guacamole and adjust the seasoning as needed.

Mexican Chorizo
Equipment
- Griddle for Tortillas
- Saute pan for chorizo
Materials
- 2 tbsp Butter
- 1 sweet potato diced
- 2 Bell peppers chopped
- 1 cup pico de gallo
- 1 lb Mexican Chorizo cut in oneinch pieces
- .5 cups Queso Cheese shredded
- 4 Eggs made your choice
- 4 Tortillas warmed
- crema for topping
Guacamole
- 3 Avocados pitted and mashed
- .5 cups pico de gallo
- 2 Limes juiced
Instructions
- Melt the butter

- Add sweet potatoes and saute

- Add the chopped peppers

- stir in the pico

- cook the chorizo with the veggies

- Top with shredded queso cheese

- Warm the tortillas on the griddle

- Cook you egg as desired
- To serve, place the tortillas on a plate, along with the Mexican Chorizo and a side of avocado.

- place your eggs on the tortilla and top with some crema
