- 1 sweet potato diced
- 2 Bell peppers chopped
- 1 cup pico de gallo
- 1 lb Mexican Chorizo cut in oneinch pieces
- .5 cups Queso Cheese shredded
- 4 Eggs made your choice
- 4 Tortillas warmed
- crema for topping
Guacamole
- 3 Avocados pitted and mashed
- .5 cups pico de gallo
- 2 Limes juiced
Melt the butter
Add sweet potatoes and saute
Add the chopped peppers
stir in the pico
cook the chorizo with the veggies
Top with shredded queso cheese
Warm the tortillas on the griddle
Cook you egg as desired
To serve, place the tortillas on a plate, along with the Mexican Chorizo and a side of avocado.
