Materials

  • 2 tbsp Butter
  • 1 sweet potato diced
  • 2 Bell peppers chopped
  • 1 cup pico de gallo
  • 1 lb Mexican Chorizo cut in oneinch pieces
  • .5 cups Queso Cheese shredded
  • 4 Eggs made your choice
  • 4 Tortillas warmed
  • crema for topping

Guacamole

  • 3 Avocados pitted and mashed
  • .5 cups pico de gallo
  • 2 Limes juiced

Instructions

  • Melt the butter
    Melt butter in the pan for Chorizo
  • Add sweet potatoes and saute
    Sweet potatoes in with the butter Chorizo
  • Add the chopped peppers
    Bell peppers added to sweet potatoes
  • stir in the pico
    Pico added to the sweet potatoes
  • cook the chorizo with the veggies

  • Top with shredded queso cheese

  • Warm the tortillas on the griddle

  • Cook you egg as desired
  • To serve, place the tortillas on a plate, along with the Mexican Chorizo and a side of avocado.
