Italian Eggs and Tomatoes, also known as “Uova al Purgatorio” (Eggs in Purgatory), is a traditional Italian dish.

Our guest today is Laura Bray. She is the Exec Dir of Milwaukee Area Technical College (MATC) Foundation. Laura is also the VP of College Advancement and External Communications @ MATC. Her accolades are numerous. They include the Milwaukee Business Journal 40 Under 40. She has received the Daniel Burnham Visionary Award. Laura earned the Frank Kirkpatrick Award from the Greater Milwaukee Foundation. Recently, she was granted a Betty Award from Milwaukee Magazine.

Italian Eggs and Tomatoes combines the rich flavors of tomatoes and eggs. This rustic, peasant-style dish originated in Southern Italy, where the ingredients were readily available and affordable.

The dish typically involves cooking eggs in a flavorful tomato sauce. This sauce is often enriched with garlic, onions, and sometimes chili flakes or peppers for some heat. The name “Purgatorio” (Purgatory) might come from the idea of the eggs being nestled in the fiery, bubbling tomato sauce. It creates a vivid and somewhat dramatic presentation.

Italian Eggs and Tomatoes Ingredients

  • 2 tbsp olive oil
  • 1 tbsp of butter
  • 1 red onion, finely chopped
  • 2 cloves of garlic, minced
  • 4 large tomatoes, chopped
  • 4 large eggs
  • Salt and pepper, to taste
  • 1 tsp red pepper flakes
  • 1 tsp fresh thyme
  • Fresh basil leaves, chopped for garnish
  • Grated Parmesan cheese

Instructions for Italian Eggs and Tomatoes:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add 1 tbsp of butter if desired
  3. Add the chopped onion and cook until it’s soft and translucent about 5 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the chopped tomatoes to the skillet.
  6. Season with salt and pepper to taste.
  7. Add 1 tsp of red pepper flakes
  8. Let the tomatoes simmer until they break down and form a chunky sauce, about 20-25 minutes.
  9. Beat the eggs and add to the tomato mixture
  10. Mix eggs and tomatoes and cook for about 5-7 minutes.
  11. Transfer the eggs and tomato mixture to plates.
  12. Garnish with fresh basil leaves and grated Parmesan cheese.

    Wonderful! It’s interesting. Turkey has a similar dish, as does Mexico! Probably other countries, as well. But I guess you tend to have eggs and grow tomatoes!
