Our guest on “Cooking with Milwaukee Community Leaders” is DeShanda Williams-Clark. Deshanda is the Sr. VP of Programs & Services for Pathfinders, one of Wisconsin’s oldest and most effective nonprofit organizations serving youth in crisis. She is also a member of the MKE Business Journal 40 under 40 list, shining a light on our next generation of emerging community leaders.

Taco Salad with Ground Turkey

Taco salad’s popularity comes from the combination of flavors and textures.  It is a convenient meal option for people on the go. The blend of seasoned beef (or turkey), fresh lettuce, cheese, salsa, sour cream, and crunchy tortilla chips or strips are easy to prepare and serve to a group. 

Whether you’re enjoying it at a Tex-Mex restaurant or making it at home, this flexible-ingredient dish celebrates the flavors of Mexico.

You can customize it with grilled chicken, shrimp, or even tofu, add extra veggies, and experiment with different dressings to enhance the flavors.

Today we are using Ground turkey, taco seasoning, cheddar cheese, lettuce, chopped tomatoes, green onions, guacamole, pico di gallo, Corn salsa, and cheese Doritos.  For the sauce, we use cream cheese and sour cream, with some taco seasoning.

If you’re looking for a healthy twist, try a version with black beans, tomatoes, avocado, and a zesty cilantro lime dressing.

Equipment

  • No special equipment needed

Materials

  • 1 tbsp Olive Oil
  • 1 lb Ground turkey
  • 2 pkgs Taco seasoning for the ground turkey
  • 8 oz Cheddar cheese
  • 1 cup Shredded lettuce
  • 1/2 cup Chopped tomatoes
  • 4 tbsp Green onions
  • 1 cup Guacamole
  • 1/2 cup Corn salsa
  • 1 cup Pico di gallo
  • 1 bag Cheese Doritos

For the Sauce

  • 1 8 oz Cream Cheese room temperature
  • 1 cup Sour Cream
  • 1 pkg Taco Seasoning for the sauce

Instructions

For the Ground Turkey

  • Heat oil in a large skillet
  • Saute the ground turkey until all the pink is gone

  • Add 1 package of Taco Seasoning to the meat. Add more seasoning if needed

To Make the Sauce

  • Combine room temperature cream cheese and sour cream in a large bowl.

  • Add the Taco seasoning and mix until smooth. If sauce is too thick, add more sour cream.

Assemble the Taco Salad

  • On a large plate or tray, spoon a layer of the sauce on the bottom of the plate

  • Layer 1/2 of the taco meat on top of the sauce

  • Top the taco meat with cheese

  • Add any toppings or garnishes as you like

  • Add another layer of sauce, followed by meat, cheese, and final toppings
