The most common winter squash in grocery stores are butternut, spaghetti, and acorn squash. Pumpkin is also technically a squash, but not all pumpkins are edible.

Because of how we cook squash, most people assume it’s a vegetable. However, squash is a fruit because it contains seeds and they flower. It is just like a tomato, which is also a fruit.

Today I’m going to show you how I roast an Acorn squash. I grew up eating acorn squash that my mom doused in brown sugar and butter. It always tasted great as a kid, but maybe not the best thing to eat.

I have been playing around with a savory version of roasted acorn squash, where you cut it into more bite-sized pieces, and cover the squash with herbs, parmesan cheese, and butter. Roast it for 30 minutes and the skin is tender enough to eat.
