Grandma’s French Pancakes. We are making Grandma’s Rustic French Pancakes. And they are quite the treat. While the term “rustic” often conjures up images of hearty, homemade dishes, these French pancakes are quite delicate and thin.
Our guest for “Cooking with Milwaukee Community Leaders” is Carole Nicksin. Carole has been the Publisher and Editor in Chief at Milwaukee Magazine (https://www.milwaukeemag.com/), since 2016. Carole shows us how she makes Grandma’s French Pancakes.

Grandma’s French Pancakes
Simple rustic French pancakes, commonly known as “crêpes,” are a delightfully thin and versatile treat. They are typically made from basic ingredients like flour, eggs, milk, and butter.

To make crêpes, you’ll need a special crêpe pan or a nonstick skillet. The batter is thinner than the American pancake batter.

Grandma’s French Pancakes
Once cooked, you can serve these rustic French pancakes with a variety of fillings or toppings, such as Nutella, fresh fruit, jam, whipped cream, or a sprinkle of powdered sugar. They’re perfect for breakfast, brunch, or even as a sweet snack.

Old-Fashioned Pancakes (American Style) vs Grandma’s French Pancakes
These golden, fluffy pancakes are a classic American breakfast. They’re nostalgic, comforting, and perfect for lazy Sunday mornings.

Ingredients:
Dry ingredients: All-purpose flour, baking soda, salt, and sugar.
Wet ingredients: Buttermilk, a large egg, and melted butter (slightly cooled). You can also add a touch of pure vanilla extract for extra flavor.
For cooking: Nonstick cooking spray or vegetable oil.
For serving: Butter pats, fresh berries, and maple syrup.

Instructions:
In a large bowl, whisk together the dry ingredients.
Add buttermilk and whisk until just combined.
Mix in the egg, vanilla (if using), and melted butter. The batter will be a bit lumpy.
Let the batter rest for 5 to 10 minutes.
Heat a griddle or large pan, coat it with nonstick spray or oil, and pour pancake batter onto it.
Cook until bubbles form on the surface, then flip and cook the other side.
Serve with your favorite toppings.
So, whether you’re craving fluffy American-style pancakes or delicate French crêpes, both options have their own unique charm.
