Grandma's French Pancakes

These golden, fluffy pancakes are a classic breakfast. They’re nostalgic, comforting, and perfect for lazy Sunday mornings.

Equipment

  • Mixing Bowl (small-medium)
  • Whisk, Measuring cups & spoons
  • Spatula
  • Small sieve for powdered sugar

Materials

  • 4 eggs each egg makes about 1.5 pancakes
  • 1 cup flour SEE NOTE BELOW
  • 1 cup milk
  • 1/2 tsp Vegetable oil ½ tsp for each pancake
  • 1/2 tsp Butter ½ tsp for each pancake
  • 1-2 tsp Cream cheese 1-2 tsp for each pancake
  • 1-2 tsp Strawberry Jam or any Fruit preserves 1-2 tsp for each pancake
  • Powdered sugar sprinkle on each pancake
  • Chopped mint to garnish optional

Instructions

  • Heat ½ tsp oil and ½ tsp butter in pan over medium heat. (9” skillet is good; the heavier the pan, the better)

  • Whisk eggs together, blending well.

  • Add flour and whisk until smooth.

  • Add milk slowly & whisk until smooth.

  • Pour a thin layer of batter into pan, tilting pan to spread the batter evenly.

  • As the pancake cooks, loosen edges with a spatula.
  • When the top of the pancake looks solid, flip and cook briefly on other side (a minute or so).

  • Place pancake on a plate.
  • Place slices of cream cheese across the diameter

  • Then spread preserves next to the cream cheese.

  • Fold one edge over, then roll.

NOTE from the Video: There are 16 tablespoons in a cup. In the video, we talk about it as if there are only 8. We used a heaping flatware tablespoon, two tablespoons equals about ¼ cup.
