Grilled Sweet Potato Fries

We parboil the sweet potatoes whole, cut theminto wedges and then finish them on the grill.

Equipment

  • 1 Grill
  • 1 pot for boiling potatoes

Materials

  • 2 Sweet Potatoes
  • 1 tbsp Olive Oil
  • Salt & Pepper to taste

Sriracha Dipping Sauce

  • 1 tbsp Sour Cream
  • 1 tbsp Mayonaise
  • 1 tsp Sriracha Sauce

Instructions

  • Bring a pot of salted water to boil.
  • Heat grill to medium high
  • Parboil Sweet Potaoes in the, salted water, until they can be pireced with a fork or knife, about 10-15 minutes

Make the Sriracha Dipping Sauce

  • Combine equal amounts of Sour Cream and Mayonaise in a small bowl.
  • Add Sriracha Sauce and stir to combine. Set aside.

Grilling the Sweet Potatoes

  • Remove Sweet Potatoes from the water and cut into wedges, leaving the skin on
  • Put wedges in a bowl, toss with olive oil and salt & pepper

  • Place wedges on the grill. Allow them to get grill marks, about 3-4 minutes

  • Turn wedges to get grill marks on the other side. No need to get grill marks on the sweet potato skin.
  • Serve with Sriracha Dipping Sauce
