Easy Feijoada

Materials

  • 2 cups basmati rice cooked
  • 1 tbsp olive oil
  • 6 strips of bacon cut into ½” pieces
  • 1 onion chopped
  • 1 Green Pepper chopped
  • ½ lb smoked pork sausage sliced into ¼” rounds
  • 1 15 oz can black beans do not drain
  • 1 cup chicken broth
  • 2 tsp garlic powder
  • 3 bay leaves
  • 1 tsp dried oregano
  • salt to taste

Instructions

  • Cook the rice according to package directions.
  • Heat a large pot over medium heat.
  • Add olive oil and heat.

  • Add the bacon and sauté until crispy, about 4 minutes.

  • Saute the onions, garlic and green peppers

  • Put the smoked pork sausage in and sauté

  • Add the black beans and cook for 1 more minute.

  • Add the chicken broth, garlic powder, bay leaves, oregano, and salt.

  • Bring to a boil and then reduce heat to low.

  • Simmer for 15 minutes or until desired thickness.
  • Don’t forget to remove the Bay Leaves
