Baked Salmon with Creamy Lemon Sauce

- 1½ lbs salmon
- Salt & pepper
- 1 tsp lemon zest
- 1 tbsp Olive Oil
- 1 Garlic clove Minced
- ¼ cup Lemon Juice
- 2 tbsp capers
- ½ cup sour cream fat free is best for South Beach
Preheat oven to 350.
Cover baking sheet with aluminum foil
Place the salmon on baking sheet.
Season fish with Salt & Pepper
Sprinkle lemon zest on salmon
Bake for 20 minutes or until the fish is just opaque.
While the fish is cooking, make the lemon sauce
Heat oil in a small saucepan over medium heat.
Add garlic and cook for 1 minute.
Reduce heat to low.
Stir in the lemon juice and capers, and cook for 1 minutes.
Add the sour cream and cook for 5 minutes on low, until heated through.
Remove fish from oven and serve with the lemon sauce on top.
