South Beach Shrimp Stir Fry

South Beach Shrimp Stir Fry, also good for the Keto diet. This is an easy Shrimp Stir Fry to use on South Beach Diet or Keto. Stir to cook and delicious to eat. Can be a weekday meal, ready in under 30 minutes.

Equipment

Materials

  • 1 onion chopped
  • ½ bell pepper chopped
  • 1 cup celery chopped
  • 2 tbsp ginger minced
  • 4 cloves garlic minced
  • Salt & Pepper to taste
  • 1 15 oz can chopped tomatoes (with Juice)
  • 1 bay leaf
  • ½ tsp ground black pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp Soy Sauce
  • 1/2 tsp red pepper flakes
  • 1 pound medium shrimp peeled, deveined, and no tail
  • 1 cup Sugar snap peas

Instructions

  • Over medium heat, cook the onion, bell pepper, ginger and celery for 5 minutes, or until tender.
  • Stir in the garlic and cook for 1 minute.
  • Add the tomatoes (with juice), bay leaf, black pepper, Worcestershire sauce, soy sauce and crushed red peppers.
  • Heat to boiling. Reduce the heat to low and simmer for 10 minutes.
  • Add the shrimp and sugar snap peas, until the shrimp are opaque.

  • Remove and discard the bay leaf before serving.
