Equipment

Materials

  • 1 lb Prawns or shrimp
  • 1 Lemon, juiced
  • 1/4 tsp Salt
  • 1/2 tsp Turmeric Powder
  • 1 tbsp Cooking oil
  • 1 Onion chopped
  • 1 tsp Garlic minced
  • 1 tsp Ginger minced
  • 1 Green chili minced
  • 3 tbsp Curry powder
  • 1 tsp Paprika
  • 1 Can of Coconut milk
  • Salt & Pepper to taste
  • 1/4 cup Cilantro chopped
  • Rice for serving

Instructions

  • In a bowl, add the lemon juice, salt and turmeric.
  • Toss in the shrimps and coat, set aside while you cook the aromatics.
  • In a skillet, add oil, and cook the onions and ginger until it sweats
  • Add by the curry powder, paprika - sauté for 30 seconds more.
  • Next, add the coconut milk - and bring it to a boil.
  • Season with salt and black pepper.
  • Cover and simmer on medium heat for 5 minutes.
  • Add the shrimp and cilantro.
  • Cover and cook for 5-6 minutes or until shrimp are cooked through.
  • Garnish with fresh cilantro. Serve over steamed rice.

Notes: If you don't have prawns or shrimp, you can make this with skinless, boneless chicken thighs and it is just as delicious.
