Materials

  • 2 tbsp vegetable oil
  • 3 tbsp Massaman curry paste store-bought or homemade
  • 1.5 lbs Beef short rib or chuck
  • 1 can Coconut milk
  • 1/2 cup veggie broth
  • 2 Potatoes, waxy peeled, parboiled, and cut into chunks
  • 2 Carrots peeled, parboiled, and cut into chunks
  • 2 Onions sliced
  • 2 tbsp Fish sauce
  • salt to taste
  • 2 tbsp sugar
  • Peanuts or cashews for topping
  • Jasmine rice and roti for serving

Instructions

  • Heat oil in a wok

  • Fry the massaman curry paste in coconut cream until thick and fragrant.
