South Beach Ricotta Almond Creme Dessert

  • Medium bowl and a whisk


  • 16 oz tub low fat or fat free ricotta cheese
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1.5 tbsp Splenda or other artificial sweetener
  • ½ cup slivered almonds toasted in a pan (no oil)


  • Toast the slivered almonds in a pan, with any oil
  • Almonds will brown in 1-2 minutes. Watch to make sure they don’t burn.
  • In a bowl, whisk together the ricotta, vanilla extract, Almond extract and sugar substitute.
  • Add toasted slivered almonds to the mixture.
  • Serve immediately or chill for 2 hours or overnight.
