Curried Chicken Salad – With this recipe, I wanted to accomplish two things. I would like to make an easy dish using a rotisserie chicken. And I wanted to use some of the Paradise Fruit Company’s crystallized (candied) ginger in a recipe.

So, we made a Curried Chicken Salad with Paradise Fruit Company’s candied ginger. This is a low-carb, keto-friendly recipe, using chicken that someone else cooked for you.

This rotisserie chicken salad recipe is not your average one either. It’s a curry chicken salad with green apples, shredded carrots, and toasted slivered almonds. It is tossed in a lemon dressing that’s lightened up with Greek yogurt. And we top with Paradise Fruit Company’s Candied Crystallized Ginger.

Chicken salad is a very old-school dish to me.  It was a staple of my mother’s kitchen.  But the convenience of a cooked rotisserie chicken was not available then. So, it took longer to make a good chicken salad, if you had to cook the chicken first.

Our way makes this classic dish an “anytime” food.  This curried chicken salad with rotisserie chicken has its roots in the classic preparation.  It’s simple but with a few twists.

So, let’s show you how we make this easy curried chicken salad with candied ginger. It is an easy recipe. You can serve it on bread if you like. And any sort of chips will do nicely. I hope you enjoy this recipe.

Curried Chicken Salad

This is an easy Curried Chicken salad with Paradise Fruit Company’s Crystallized Ginger, toasted slivered almonds, and serve with some plantain chips. It is a low-carb, keto-friendly recipe, using chicken that someone else cooked for you.

Materials

  • 1 Rotisserie Chicken
  • 1 cup plain Greek yogurt
  • 2 tbsp curry powder
  • Juice of 1 lemon
  • Salt & Pepper to taste
  • 4 scallions chopped
  • 1 small green apple peeled and finely chopped
  • 1 carrot shredded
  • Boston Lettuce leaves or other lettuce
  • 1/2 cup slivered almonds toasted
  • Crystallized ginger very thinly sliced, for garnish
  • Serve with Plantain chips

Instructions

  • Remove the skin and bones from the rotisserie chicken and chop into bite size piecse

  • Combine the yogurt, curry powder and lemon juice in a large bowl and season with salt and pepper.

  • In the same bowl, add the chicken, scallions, apples and carrots and mix until combined.
    Green Onions
  • On a Boston lettuce leaf, place the chicken salad in the center.

  • Sprinkle the slivered almonds and crystallized ginger.
  • Serve with plantain chips.
