Broiled Flank Steak – Flank Steak is one of those cuts of beef that is really delicious when done well. But it can also be really easy to mess up. We show you how get cook a Flank Steak under the broiler.

Flank steak is a long and thinly cut strip of muscle from below the loin. It is usually sold in stores rolled up in a neat little bundle. Flank steak is very lean, boneless, and full of delicious beefy flavor. The cut does not have a lot of fat, which is why marinating flank steak is the way to go. And why cooking it properly is very important. An overcooked flank steak can be very chewy.

Marinating Flank Steak

Because flank steak does not have a lot of fat to add flavor, marinating is the best way to tenderize the meat and add flavor. Because it is so thin, it is really great at absorbing marinade.

Use your favorite marinade that you have used and really like. It is going to work great with flank steak. The basic elements of a good marinade are fat, acid, and flavor. Fat means oil (such as olive oil), acid means lemons, limes, vinegar, wine, and flavor means spices and herbs. And I almost always add garlic to a marinade.

How to Broil Flank Steak

Flank steak is the perfect cut of meat for broiling. It’s a great method to use especially in the winter when you don’t have access to your grill.

Turn your broiler on to high heat, and set your oven rack so that the steak will be about 3-4 inches below the heat. Line a baking sheet with foil. You will use the foil to cover the Broiled Flank Steak when the meat is resting.

How to cut Flank steak

Flank steak is made up of lean muscles that all run in the same direction. It’s called the “grain” of the meat. It’s important to cut these grains into shorter pieces so that your teeth aren’t doing all the work. To get a really tender broiled flank steak, cut the meat into very thin ¼ inch slices against the grain.

Equipment

  • Oven pan
  • Aluminum foil
  • Sauté Pan

Ingredients

  • 1 lb Flank Steak
  • 1 tbsp Soy Sauce
  • 1 tsp dry mustard
  • 2 cloves minced garlic
  • salt & Pepper
  • 1 tbsp olive oil
  • 1 cup sliced mushrooms
  • 1 tbsp butter
  • 1 tsp thyme

Instructions

Marinate the Steak

  • Marinate the flank steak for several hours covered in the fridge. Use your favorite or the recipe below
  • My marinade was Soy Sauce, dry mustard, garlic, salt & Pepper, olive oil

When ready to cook dinner…

  • Allow steak to come to room temperature before broiling
  • Pre heat the broiler
  • While the broiler pre heats, cover an oven pan with aluminum foil
  • Assemble ingredients for Mushroom sauce – mushrooms, butter, salt & pepper, thyme

  • Place flank steak in the oven, under the broiler and set the timer for 4 minutes
  • While the steak is broiling, melt the butter and sauté the mushrooms.
  • Add salt, pepper and thyme to mushrooms
  • At the 4-minute mark, turn steak over and broil another 3-4 minutes
  • Remove from the oven, and fold the aluminum foil over the steak and rest for 5 minutes

115F to 120F for a rare steak, 120F to 125F for a medium-rare steak, and 140F to 145F for medium-well steak.
