South Beach Ricotta Cheesecake is a low-carb, low-fat cheesecake recipe for South Beach and Keto. Baked in ramekins, made with minimal ingredients.

Crustless ricotta cheesecake made with Splenda sweetener created by someone who just had to have dessert once in a while.

South Beach Ricotta Cheesecake

Cheesecake can be a great keto dessert. As long as you use a low-carb sweetener, the rest of the ingredients are very keto-friendly! It’s a delicious dessert that feels like indulging even when you’re not.

If you love this rich, delicious dessert as much as I do, you have to try our Italian ricotta almond cream dessert. It’s also South Beach and Keto friendly.

This is a very simple recipe to make. There is no crust. You simply whip the ingredients until smooth, fold them together, then pour into the ramekins. Bake for 20 minutes and allow to set in the refrigerator. Serve with fresh fruit on top.

Equipment

  • Mixing bowl and whisk

Materials

  • 2 cups low-fat ricotta cheese
  • 4 oz. nonfat cream cheese at room temp
  • 1 tsp vanilla extract
  • 2 eggs
  • ¼ cup Artificial sweetener like Splenda

Instructions

  • Preheat oven to 350°F
  • Mix ricotta cheese, cream cheese, sweetener and vanilla extract.

  • Add in eggs and continue to beat until smooth.
  • Spoon the batter into 4 ramekins and bake in the preheated oven for 20-25 minutes.

South Beach Diet, is named after the South Beach section of Miami. It is a modified low-carb diet. It is lower in carbs and higher in protein and healthy fats than your typical eating plan. But it’s really not a strict low-carb diet.

The South Beach Diet was created in 2003 by cardiologist Dr. Arthur Agatston, M.D.  South Beach preaches that it is a healthy way of eating whether you want to lose weight or not. South Beach recommends exercise as an important part of healthy living. They say that regular exercise will boost your metabolism and help prevent weight-loss plateaus. Without exercise, it seems to derail other low-carb diets.

Diet details

South Beach is a combination of complex carbs (or the “good carbs”, which include whole grains, fruit, beans, vegetables, and legumes), lean protein, and healthy fats. It is a fiber-rich diet that you can follow for a “lifetime of healthy eating”. Simple carbs, or “bad” carbs, include sugar, syrup, and baked goods made from refined white flour.

The simplistic view is cut out the “White Food” – processed sugar, white bread, white flour, pasta, among others. Processed food – BAD. Fresh fruit, lean protein & veggies – GOOD.

  2. I have one of the cookbooks – maybe both. It’s an old diet that started quite awhile ago. I recall there were some very good recipes and obviously this cheesecake is one of them. I love individual servings…
