Quick and Healthy Turkey Sausage Soup

This Italian white bean soup is one of my favorites when I’ m looking for a hearty soup. The cannellini beans and the sausage make this a high protein meal. It is also high in fiber. It’s also a great gluten free soup. You can even turn it into a vegan or vegetarian white bean soup by simply swapping the turkey sausage out for a plant based sausage and using vegetable stock in place of chicken stock.

It starts with the Sausage

As far as flavors go, everything starts with the sausage. Sausage is a great shortcut for building flavor since it’s already packed with spices. You don’t have to let your soup cook for hours to build flavor since it is already part of the sausage. Therefore it’s important to choose a really tasty sausage. Look for a lean ground Italian turkey. Spicy or sweet sausage will work.
