October is National Pasta Month


Not sure why, but October is National Pasta Month. As an Italian, I am all for that. I will be posting several of my favorite pasta recipes over the month or so.

First a couple of tips about cooking pasta:

  1. Always make sure you have a pot of boiling water going before adding the pasta. Seems simple enough, but you might be suprised how many beginner cooks add the pasta to a pan of water, then turn on the burner to get it to boil.
  2. Always add salt to the boiling water, never add oil. For now, just trust me on the “no oil” thing during cooking.
  3. Size of the pot matters. You need a pot big enough to fit the pasta in and allow it to freely toss itself within the boiling water. Smaller pots will sometimes force the pasta to glom and stick together.
  4. Follow the directions on the box for pasta cooking times. But to quote Ronald Reagan – “Trust, but verify”. Test the pasta to verify it is cooked. The pasta will continue to cook as you drain it, so please don’t overt cook it.
  5. Lidia Bastianich, one of my favorite chefs, preaches to finish cooking the pasta in the sauce that you may be preparing. More on this later.
  6. Always save a little of the cooked pasta water in case you need something to add to your sauce. More on this in future updates
  7. Cook, eat, enjoy, repeat!
